Born across the pond in London, Blackout Baking Co. began as an obsession: bringing the perfect bite of Americana to Londoners—cookie, not biscuit. Life happened, the ovens kept going, and Blackout landed in Chicago, where we bake fresh, preservative-free cookies with intention and attitude.
A little history on Blackout: before London, before Chicago, we were New Yorkers. Our name pays homage to the iconic Brooklyn Blackout cake—chocolate on chocolate on chocolate—created during World War II by Ebinger’s Bakery. The cake honored the mandatory blackouts meant to protect the Brooklyn Navy Yard, and the indulgence spoke for itself. Rich, layered, unforgettable—much like the cookies we bake today.


Blackout Baking Co. was founded by Shana Taveras. With a background in design, her obsessive attention to detail shows up in every element—from texture and flavor balance to the shape of the cookie and the packaging it arrives in.
