Blackout Baking Co. is a brick-and-mortar and e-commerce bakeshop specializing in bite-size gourmet cookies. Perfect for gifting and events, we strive to create BLACKOUT-worthy cookies that bring us back to our childhood, but push boundaries with new flavors, textures, and forms.
Blackout Baking Co. was born across the pond through an obsessive journey to bring Londoners the perfect bite of Americana with a cookie (not biscuit).
Since our inception, life happened, and Blackout Baking Co. moved to Chicago! We are bakers who make fresh cookies without preservatives.
A little history on Blackout.
Although we're based in Chicago, and before London, we were New Yorkers. Our name is a nod to the old school Brooklyn Blackout cake, which is a chocolate cake filled with chocolate pudding and topped with chocolate cake crumbs, hence 'chocolate on chocolate on chocolate'. It was invented during World War II by a Brooklyn bakery chain named Ebinger's, in recognition of the mandatory blackouts to protect the Brooklyn Navy Yard.

Blackout Baking Co. was founded by Shana Taveras. With a background in design, there’s an obsessiveness that goes into every detail from the texture, flavor balance, shape of the cookie, packaging, etc. 'I love creating beautiful things that bring people joy.
